15 minute seafood spaghetti & Cherry Tomatoes

My other half ate this at a restaurant just recently so recreated it at home. I’m vegan so have it without the seafood.

I utilize frozen seafood for this meal however feel free to utilize fresh. Frozen just keeps the expense down when cooking for two or more as well as as the seafood is frozen at sea, it is incredibly fresh anyway! Also, any type of meal that can be made in 15 minutes is a keeper as far as I’m concerned as well as my grateful good friends named this the 15 minute seafood spaghetti & Cherry Tomatoes when I passed on the recipe to them.

You may like to cook it up if you hold a dinner celebration too.

My youngest, Alexander is adventurous with food as well as while Oliver, my eldest has a tendency to pick out a few of the seafood, Xander dives right in!

Seafood spaghetti with cherry tomatoes

Ingredients

(Serves 2)

1 tbsp olive oil

2 shallots, finely diced

3 cloves of garlic, crushed

120g pack frozen seafood mix of prawns, calamri as well as mussels, defrosted

Handful of cherry tomatoes, halved

200ml great high quality white wine (I like to utilize Pinot Grigio)

150g spaghetti, cooked according to the packet instructions

Handful of parsley, chopped

Juice of 1 lemon

Method

Heat the olive oil in a big shallow pan as well as fry off the shallot as well as garlic up until they are soft as well as fragrant.

Add the seafood, tomatoes as well as white wine to the pan, cook for around 3-4 minutes.

Add the cooked pasta to the pan as well as toss it into the seafood.

Serve with the chopped parsley as well as lemon juice to garnish.
